Some leveling challenge ideas?

Ok - I've decided I want to try to keep playing the game - but what I need is something unusual as a challenge while I'm leveling.
I'm wondering if anyone can think of any.
I want something that's obviously doable - not something that will just end up having me stuck at a level without any chance of moving on.
I'm wondering what you guys can think of. I suppose a certain class without any equipment, just spells. Or a specific class in which I can only use one specific spell.
I don't know - I don't know the game well enough. But I want to do some sort of challenge, and try to add something to the game for myself.
I also want to be Horde.

hunter with level one weapon all the way to 70 never upgrading gear...
trying to get exhalted with every faction and get their mounts by 40
not dying, just like real life...any class
priest only SW:pain and psychic scream
warlock without pets
hunter without pet
melee only with a mage/priest/lock
getting 1k gold by level 20

Not bad - some maybe a little tedious (like only SW: Pain and SS)
What about going Holy Priest from the start? I assume that would be a challenge, since Shadow is what the normal leveling build is.
Might be interesting to go Holy from the get go. Perhaps limit myself to Holy Spells only as well?

holy actually pretty easy in lower levels...the reason people go shadow is because the talent tree actually accomodates it better...how about instancing from lvl 14 to 70...and doing nothing else? it will challenge you quite a bit more than holy...which is just boring.

Hmm, not a bad idea - but won't work too well for me. I'm usually not the type who has time for instances, as I often have to get up and do something else unexpectedly. Usually I do instances once I've out leveled them and can solo them on my own time.
I think I've got what I'll try - I looked over the Priest tree, and I've noticed that I almost never hear anyone talking about Discipline Priests. I think I may take that route. So it's a bit of a challenge, as well as a theme. I'll put about 10 points into the other two trees (Spirit Tap, and Holy Specialization), and then I'll put the rest in discipline (or I may not do the Holy Spec one).
That might be fun and interesting.

How about living off the land? No AH, no buying and selling, except for food, drink and arrows, mount and such... the quest rewards actually pay for your training. I did it to around 30.

I didn't know they sold gold at all. I thought they just had a nice tool for making builds with
